It belongs to the product group of rices “Fini” and is characterized by a compact and semi-tapered grain, it is the most traditional rice grown in Vercelli area, compared to Carnaroli has a lower firm cooking but it contains a large amount of starch that helps the preparation of creamy dishes and soups.
