It is a "young" rice that means that it is a species recently selected from the Arborio rice and it is part of the family of Superfini rices.
Even though it is not well-known outside the traditional area of cultivation, it is a very versatile rice with quite substantial grains and a great value for money.
Use: risotto, baked rice and salad.
