It is a type of rice with medium/large grains whose characteristic is the Parboiled (partially boiled) process in its production.
This process consists of dipping the rice in hot water and quickly dry out.
Through this process all the nutritive substances are locked inside the grain giving it a greater nutritional value and a greater resistance to be overcooked.
Use: Salads, Risotto.
